Mac and cheese is awesome, and the kids like it too. But, it’s not the healthiest of dishes and doesn’t allow for a lot of variation.
But how about we add some yogurt instead? Eureka!
Recipe for 2 Persons
Cooking time: 30 min
150 gr/ 5 OZ Macaroni
300 ml / 10 FL Milk
200 ml / 6,5 FL water
400 gr / 14 OZ baby spinach
100 gr / 3,5 OZ Ham strips or cut up ham
100 ml / 3,5 FL Greek Yogurt
75 gr / 3 OZ Grated cheese
Pinch of salt and pepper
Cook the macaroni with the milk and water, make sure you keep stirring, when the macaroni is cooked ( this will take around 8 -10 min) and most of the fluid is absorbed you can start adding the cheese, the yogurt, the ham, and the spinach. Keep stirring and after a few minutes you can take it off the stove. Add a pinch of salt and pepper to your taste.
KIDS TIP: If your kids don’t like spinach (like mine …) you can take their portion out before you put in the spinach. You just put everything in the macaroni except for the spinach also the salt and pepper. When you got a bit on the site for them you still can add the spinach and let it heat a bit more on the stove, just keep stirring while you heat it.
