If you think about kid-food, risotto is probably not the first thing that comes to mind. Now, risotto is not something every kid enjoys, but with this recipe it’s sure to be a hit especially with the magic ingredient (tip: it’s fish sticks). Maybe it’s not a good idea to call it Risotto, kids tend to not like things they don’t know, so just call it rice.
My little one loved it, so I hope yours does too. Happy cooking!
This is a recipe for two persons
150 gr / 5,5 Oz. Risotto rice
2 tbsp. cream cheese with herbs
375ml / 12,5 Fl. (vegetable) bouillon
1 glove of garlic
200 gr / 7 Oz. Mushrooms
100 gr / 3,5 Oz. peas
8-10 fish sticks
Pinch of Salt and pepper
Pre-heat the oven at 180 °C or 360 °F.
Cut up the onion and garlic into nice and small pieces, also cut up the mushrooms into slices.
Bake the onion and garlic with some olive oil. After a minute or 2 you can add the mushrooms and the peas. Keep all this going for about 5 minutes. Now, add the rice and bake it together for just 1 minute.
Then you add salt and pepper to your taste and do all this in a baking dish, that you first oiled. Pour the bouillon on the rice and put it in the oven for about 35 minutes. All you have to do is wait until all the water is gone. When the risotto is ready you can add the Cream cheese and put it back in the oven for about 10 minutes.
Get ready to start frying your fish sticks and you’re almost done.
